I’m looking to track the x, y and z location of a helicopter in 3D space during the final minute during take-off and landing (ideally for a high height and distance from the landing surface: 100m x 100m). Is this possible, what maybe the possible resolution of position, and if so what system would I need to employ?

To cover the size of this area, you need a multi-camera setup.
You can achieve this by using the ZED Fusion module: Fusion - Stereolabs
and a Custom Object Detector to track the helicopter:
